Vanilla Extract- 1 tsp
Almond Extract- 1 tsp
Strong Bread Flour- 300g
Baking Powder-1 tsp
Salt- ¼ tsp
Bananas (very ripe), mashed- 550g total weight
Pecans, roughly chopped- 75g
Plain Flour- 50g
Ground Pecans- 50g
Pecans, roughly chopped- 80g
For a 1kg loaf tin
Grease and line the base of a 1kg loaf tin
Beat the eggs, almond and vanilla essence together.
In a separate bowl mix together the flour, salt and baking powder.
With the paddle attachment, cream together the butter and sugar.
Slowly add the egg mixture and mix until thoroughly combined.
Mix in the mashed banana.
Add the dry mixture and nuts and mix until just combined.
Pour in to the loaf tin and smooth the top.
For the streusel topping, put the butter, flour, sugar and ground pecans in to a bowl and rub together until a crumble mixture forms. Stir in the chopped pecans.
Top the cake batter with the streusel.
Bake for 55 mins at 180C
