INGREDIENTS

 

 

Butter, melted

100g

Ground Almonds

200g

Caster Sugar

200g

Egg Whites

40g

Fruit Puree

50g

Honey

40g

Whole Eggs

200g

METHOD

  • Put the almonds, sugar and egg whites in a mixer bowl and beat with the paddle attachment.
  • Add the fruit puree and honey and beat to a paste.
  • Add the eggs one at a time, mixing between each addition.
  • Finally add the melted butter.
  • Pipe in to the prepared moulds (we use a silicon dariole mould).
  • Top each cake with a few nuts and fresh fruit of your choice.
  • Bake at 180C for 12 mins
  • Leave to cool before turning out of the mould.
