Mix all the spices together with the sugar. Add to a deep saucepan.
Add 300ml water and mix to dissolve the sugar mixture.
Bring to a simmer over a medium heat then add the bottle of wine.
Bring back to the simmer, switch off the heat and leave to infuse for at least an hour, the longer the better.
When ready to serve gently warm the wine until it just starts to steam. It's best not to boil it as this will drive off a lot of the alcohol which kind of misses the point!!
